FINITE EDITIONS 'Sanguine Horizon' Chinotto & Fresh Bay Gin
The core flavour profile is the coming together of the unique citrus profile of chinotto fruit and an extremely lifted fresh bay leaf aroma. Fresh bay leaf was something that particularly stood out to us during early cold-distilling trials as absolutely singing in the glass, so a recipe we had in mind that had been trialled with orange and a strong dry spice core was put to work once we were allocated a small amount of chinotto fruit from Mountain Yuzu in the Victorian Alps. The spice profile includes cinnamon, allspice and star anise as well as a little gentian, giving the impression of a gentle hint of bitterness against the fullness of the chinotto and bay.
What became known as 'Sanguine Horizon' was made in extremely small quantities with nothing but flavour as the goal, and rested for over a year before release.
