Fresh bay leaf was something that particularly stood out to us during early cold-distilling trials as absolutely singing in the glass, so a recipe we had in mind that had been trialled with orange and a strong dry spice core was put to work once we were allocated a small amount of chinotto fruit from Mountain Yuzu in the Victorian Alps.
